"What's for Dinner Wednesday"




It's Fall...It's October...and nothing says Fall like a big ol' bowl of chili...well, that, and the changing of leaves, crispness in the air, pumpkin patches, apple picking, I could go on and on..Well, in Texas it hasn't quite turned crisp, the leaves haven't started changing and it's still hotter than hades outside..but you know, in my house it's Fall..turn that air conditioning up and the air is crisp..light a pumpkin candle and the smells of Fall waft through the house..

So for this edition of "What's for Dinner Wednesday" I chose to make a Pumpkin Chili..that's right folks, I put pumpkin in my chili..and I have to thank the peeps at Allrecipes for sending this one to me..I, uh,, didn't come up with it on my own..


It's homemade, hearty and not to mention healthy..


Here's what you need


1 tbs of vegetable oil

1 cup chopped onion (I used a whole one)

1/2 cup chopped green bell pepper (I used a whole one)

1/2 cup chopped yellow bell pepper (I used a whole one)

1 clove garlic minced (I had minced garlic in my fridge and I just threw in what I thought would be a good amount)

1 lb ground turkey

1 can (14.5) diced tomatoes

2 cups pumpkin puree

1 1/2 tbs of chili powder

1/2 tsp black pepper

dash of salt

shredded cheese

sour cream

I added cumin to mine..didn't measure..just to taste..same with the chili powder


Here's what you do

Heat the oil in a large skillet over medium heat, and saute the onion, green pepper, yellow pepper and garlic until tender. Stir in the turkey and cook until evenly brown. Drain and mix in tomatoes and pumpkin. Season with chili powder pumpkin and salt. Reduce heat to low. Cover and let simmer for 20 mins. Served topped with cheese and sour cream.

FYI: I would double it up if you want leftovers or have a big hungry family..just sayin.'

I also cooked up some good ol' fashioned corn bread to go with it..Yum!!

Doesn't this meal just scream Fall?

It was super yummy!! Ethan at it up..Emme not so much..but Mike loved it!!

I didn't tell the kids there was pumpkin in it..actually they asked before they started eating it and I said no, so they would eat it..
